Smoked Queso Dip

  • 1 pound of hot sausage
  • 1 pound of Velveeta (I chose the Mexican Blend)
  • 8 ounces of shredded cheese (I chose Colby Jack)
  • 1 can of Rotel
  • 1 tsp of minced garlic
  • 1/2 cup of beer

Preheat your smoker/grill to 250

Brown your sausage in a skillet

Cut up the Velveeta into small cubes

Place all of the ingredients into an aluminum pan and put on your grill/smoker for 45-60 minutes. Stir the mixture until everything is blended.

Serve with your favorite chips or spread over a baked potato
