Stuffed Zucchini Boats

Fresh zucchini loaded with a savory turkey filling and finished in the oven for a simple, satisfying backyard side.

Ingredients
  

  • 1 pound lean ground turkey browned
  • 1 small yellow onion diced
  • 1 can Rotel tomatoes
  • 1 can black beans drained and rinsed
  • 1 can corn drained and rinsed
  • 1 tablespoon Smoking Bros Rubs Lockdown seasoning
  • 1 tablespoon Smoking Bros Rubs Shakedown seasoning
  • 2 teaspoons lemon juice
  • 3 zucchinis
  • Olive oil
  • Salt and pepper to taste
  • Shredded cheese

Method
 

  1. Preheat oven to 350°F.
  2. Dice the onion and cook in a pan over medium heat until softened.
  3. Add the ground turkey and brown. Once browned, add both Smoking Bros seasonings.
  4. Add the Rotel, corn, and black beans to the turkey mixture and stir to combine.
  5. Add the lemon juice and let the mixture simmer for a few minutes.
  6. Cut the zucchinis in half lengthwise and scoop out the inside flesh.
  7. Brush the zucchini halves with a light coat of olive oil and sprinkle with salt and pepper.
  8. Place zucchini in the oven for about 10 minutes to pre-cook slightly. Remove from oven.
  9. Scoop the turkey mixture into the zucchini boats and top generously with shredded cheese.
  10. Return to the oven until the cheese is fully melted. Enjoy!
